Sweet Potato Oat Waffle recipe

A plus to this is that these are flourless. And you can make a batch of these and freeze them. Whenever you are ready to eat some, just pop them in the toaster oven to crisp up.
Here is what you’ll need:
1/2 cup sweet potato
1 cup old fashioned oats
1 cup milk of choice (I used oat milk),
2 eggs (one whole and one egg white)
1/4 tsp baking powder
1 tbsp honey
1/4 tsp salt
1 tbsp
olive oil
oil spray for waffle iron.
Directions: put all ingredients into a blender and blend until puréed. Let sit for 10 minutes.
Follow the directions for your waffle iron (pour about 1/3 cup batter for small irons and 2/3 cup batter for large irons) cook until desired crispness. Top with fruit or your favorite low calorie syrup. Happy Eating!
