Sweet Potato Mash

Hello Everyone! As most of us know, a sweet potato has better nutritional value than a white potato. They carry vitamin c, vitamin a, potassium, low in carbohydrates, promote gut health, contain cancer fighting properties, support your vision, and immune system…just to name a few. I have been seeing a lot of recipes for sweet potato hash lately, but decided to do my own version of it.

Here is what you will need:

1. Tri color peppers (I used red and yellow)

2. Diced sweet potatoes ( I used a steamable bag)

3. Fresh spinach

4. Ground sausage (I used impossible sausage)

5. Eggs

6. Salt Free Seasonings of Choice

 

Directions- Ground sausage in olive oil and seasonings. Dice up your peppers, sauté in olive oil as well as seasonings. Steam you sweet potatoes according to the package. I also threw them in the air fryer to crisp them up a bit. Sauté your spinach and then fry one egg. Layer you bowl as such… sweet potato, peppers, spinach, ground sausage, and then the egg.
